I also love chicken salad sandwiches with a generous dollop of mayonnaise, lots of chicken, and not much else.
Why would you ruin a chicken salad sandwich with grapes, raisins, cashews, apples, or all that junk other people like putting in it? Who’s with me??!
Sometimes I do deviate from my very plain, but satisfying, chicken salad sandwich. Curry chicken salad hits the spot when I’m looking for both my mayo fix and a lunch that’s a bit more exciting than usual.
Curry Chicken Salad for Dayssss
When I was pregnant with my first, this curry chicken salad was a major craving of mine. I first had it at a bowling alley, of all places, shortly before I got pregnant, and the flavor just stuck in my mind, I guess.
There is a lot to love about curry chicken salad.

I love how adding one ingredient takes basic chicken salad from boring to incredible.

I only use five ingredients to make this chicken salad, and you can probably guess what those ingredients are!
- chicken
- mayonnaise
- curry powder
- celery
- lemon juice
See? Nothing too crazy here.
Don’t Be Afraid of Curry Powder
For those of you who do not normally branch outside of your local cuisine, then you have to try this dish! It has a very mild curry flavor, is not at all spicy (unless you want it to be!), and is a very nice way to dip a toe into the waters of Indian cuisine.
Unlike my chana masala chickpea tacos, this curry chicken salad is a far, far cry from real Indian food, but it IS delicious.
You should be able to find curry powder in the spices section of any major grocery store chain. Many stores will have an Asian section where you’ll find specialty spices as well.
It just looks like burnt orange powder and should clearly be labeled “curry powder.” I found mine on the Indian shelf in the Asian section at my local Kroger.
The curry flavor is very rich and spice-y, with a strong, savory scent, so a little goes a long way for us Westerners! It can be spicy, but each brand makes their curry powder differently, so look at the list of ingredients if you’re worried about heat level, or taste it before adding to any dish.
More uses for Curry Powder
Don’t be afraid to sprinkle a little curry powder on bland dishes like roast potatoes or roasted cauliflower. It can make boring side dishes interesting and delicious if you’re looking for a simple way to change up a dinner staple.
How Do You Eat Curry Chicken Salad?
Curry chicken salad is super versatile!
- Put a big spoonful between two slices of bread and make a sandwich.
- Scoop some out of the bowl with a tortilla chip.
- Dip celery sticks in it.
- Put it on top of lettuce and add a little ranch dressing.
- Roll it up in a wrap.
The sky’s the limit when it comes to curry chicken salad!

Recipe for Curry Chicken Salad
To make it even easier, instead of making my own chicken, I shred a rotisserie chicken.
Curry Chicken Salad
Ingredients
- 1/2 cup mayonnaise (Hellman’s)
- 1 tbsp lemon juice
- 3 cups cooked chicken breast meat (roughly chopped)
- 1 rib celery (finely diced)
- sea salt & pepper (to taste)
- 1-2 tsp curry powder
Instructions
- Whisk the mayonnaise, lemon juice, curry powder, and salt and pepper together in a large bowl.
- Stir in the chicken and celery and mix with the mayonnaise mixture until the chicken is totally coated and sticks together.
- Serve as the filling for a sandwich, a topper for salad greens, or alongside tortilla chips or celery as a dip.
